Thai Rice Porridge

Have enjoyed this tasty Rice Porridge many times in Thailand. Last weekend I was lucky enough to be shown how to make this dish by a lovely Thai lady called Tong who came to stay at our house. She is the new wife of a friend of ours and this is her first visit to England. When talking about food and comparing our favourite Thai dishes, we soon discovered a shared love of this tasty Thai breakfast dish and she kindly offered to show me how to make it.
Despite the stodgy name, Rice Porridge is far from heavy - in fact it's very easy to eat, more like a light soup. Tong told us that at the hospital where she works, they often serve rice porridge to the patients as it's so easy to digest. At home her family usually eat Rice Porridge about once a week for breakfast. She said they never serve it with chilli however, whenever I've eaten Rice Porridge in Thailand, chillies have always been amongst the many garnishes served with it.
